Organic Cardamom Pods
Cardamom is the seedpod of a perennial bushy herb Elettaria Cardamomum of the ginger family. The seedpods are triangular in cross section; spindle shaped and have a thin, fibrous outer shell and small black seeds. It is a cool spice with a distinctly minty aroma.
Cardamom plants normally start bearing capsules from the third year of planting. Harvesting season in Kerala is from October to February and the peak period of harvest is September to November. Seedpods are picked at intervals of 30 days. After harvest, cardamom capsules are washed cured and graded. The better grades of cardamom have unopened capsules that are green and are 6mm or larger; organic cardamom tend to have a lighter green color.
